The former owner of les rôtisseries St-Hubert, Jean-Pierre Light, is preparing to begin his new project, a residence for seniors in the Îles-de-la-Madeleine. “Our model will be an example in Quebec”, he says in an exclusive interview granted to the program “decision makers” on LCN.
The non-profit organization of which he is a member wants to start a complex centralizes a number of services. “A floor a CHSLD, a floor intermediate resource, and two floors for apartments,” said Mr. Light, about this project of $ 68 million. Two years after having sold the Group Saint-Hubert at the giant ontario Cara, Mr. Leger reiterates that it was the best business decision. “The last year has been a record year in sales and profitability. My most beautiful legacy is that it goes even better than when I was there,” he says.
He admits to have not received any warranty to the new buyer on the job, or the registered office. “I have confidence”. For five years, he said that he studied the behavior of Cara with the other restaurants that it has purchased, before turning the reins over.
He is pleased to have taken a better decision than the Tim Hortons chain, which was sold in 2014 to Restaurant Brands. “What are capitalists in the wild. Half of the head office has been thanked, they cut in the quality and sales have declined for the first time in a long time.”
Major challenges
Today the advisor to the Group St-Hubert, Mr. Leger continues to analyze the challenges of the world of the restoration. If the shortage of labour gave some trouble, the generation of milléniaux poses new requirements. He compares the preparation of a schedule to an olympic sport.
“The quality of life is very important,” he explains, ” to describe the younger generation of workers. It is now necessary to deal with their requests. The management is very different.”
