    The employees of the bakery de Froment and Seve were taking their breaks, and changed in parts dotted with the droppings of mice.

    “During the inspection, I noted the presence of mouse droppings […] in commerce,” wrote an inspector of the Department of the environment and the food inspection of the City of Montreal in November 2015.

    Property located at 2355, rue Beaubien est has received a fine of $ 1000 on the 11th of September last year for unsanitary conditions.

    “In a small room, where was made the dough, kale was on the basis of a sliding scale of white. On the sliding scale, plastic bowl were stored, ” noted the inspector in his report.

    At their first visit, two inspectors had also noticed the presence of several large and small flies, among others, in the cooking area of the kitchen, between the big oven and a wall.

    During this time, the ground-floor, a dozen employees were such as pastries and served the customers of the establishment.

    During a second visit of the inspectors, just two months later, the trade still had not solved several of these problems.

    The owner, Jean-Yves Callies, says that these problems of unhealthy conditions were caused by work to the floor above and made at the same time as the visit of the inspectors.

    “There was a pool table that was there for 35 years […] with a level of hygiene not very high, and when they were all stoned, well here it is ! We ended up with a situation that one could not master “, he explains.

    Since then, the trade has made a call to an exterminator and has hired an employee only to do the housework, he says. Inspection reports most recent show, moreover, that the mouse problem has been resolved.
